Oolong tea is one of the varieties that takes the longest to produce. It represents a semi oxidized tea whose oxidation can vary between 30% and 70%. Primarily produced in China and Taiwan, it generally yields a dark yellowish orange color. Oolong teas usually have more complex tastes and aromas than green and white teas. They have a soft and delicate astringency with rich floral and fruit notes. They possess properties similar to those of green teas but a taste similar to that of black teas. The ideal brewing temperature is between 195°- 212° F with a recommended infusion time of 4 minutes.
